Customer > Default Templates: should NOT exclude other doc templates

Setting Default Templates on a Customer's profile is handy. However I've just noticed that when emailing/printing a Sales Transaction, all other document templates are then excluded from the list of available templates.

This isn't ideal - because whilst it's handy to set the 'default' template, it doesn't mean that on some occasions we may wish to choose another template. 

To me, the default template should indeed be the default template when printing/emailing a document, but the others should still remain available if we wish to change it.
