It would be good to have a merge field that we could use on the email templates so that we could send with a signature based on who is actually sending the email. This personalises the experience.

Yep definitely a needed feature.
Also it would be great to have the ability to change the Send From email address per document type.
E.g. POs sent from purchasing@, Sales orders sent from sales@, Invoices sent from accounts@, etc
At the moment you can only select documents to be sent from either the logged in user, or the company billing contact, which is rather inflexible
